Position Summary:

RETAIL OPERATIONS MANAGER
Bucky's Varsity Meats is a retail outlet for meat products made during the course of teaching, research and outreach activities of the Meat Science & Animal Biologics Discovery (MSABD) program. Fresh and processed meat products will be sold. Examples of fresh meat products are steaks, chops, roasts, organs, accessory parts (e.g., bone marrow) and ground meat from beef, pork, lamb, veal and poultry. Processed meat products include sausages, snack sticks, salami, and bratwurst. The principal labor force in the USDA inspected spaces of MSABD will be UW-Madison students. These students will gain hands-on experience that will enrich their undergraduate curricular knowledge and enable them to assess whether they have professional interests in the meat industry or meat science.The Retail Operations Manager will be responsible for designing and implementing a meat merchandising enterprise that matches the purchasing and consuming interests of UW-Madison employees, students and guests. Consumer interests are influenced by pace of life, cultural and religious background, near-term holidays, season of the year, and environmental conditions. The Retail Operations Manager is expected to be experienced in adjusting the retail meat product offerings to accommodate these consumer interests. This enterprise will also provide valuable retail experience to employed undergraduates. In addition to conducting retail sales of meat products, undergraduate employees will also be local experts who will answer consumer questions regarding origin, production and cookery of meat products, as well as food topics of current interest to consumers.

Degree and Area of Specialization:

Associate's degree preferred
Vocational technical training in meat cutting required

Minimum Years and Type of Relevant Work Experience:

Position requires five (5) years of meat merchandising experience, ten (10) years experience strongly preferred. Experience includes the following:
wholesale procurement of fresh and processed meat products;
fresh meat cutting;
retail product pricing;
experience training new employees in meat cutting, retail product presentation, customer communications, and product conservation.
